Potato Chip Potatoes

Yield: 6-8 servings

Ingredients

6 medium potatoes, peeled and cut into 1/2-inch cubes
3/4 cup crushed potato chips, divided
1/2 cup chopped onion
2 tablespoons butter or margarine, melted
1/4 teaspoon salt
1/4 teaspoon pepper

Directions:

In a bowl, combine the potatoes, 1/2 cup of potato chips, onion, butter, salt and pepper; toss to combine. Transfer to a greased shallow 2-quart baking dish.

Sprinkle with remaining potatoes chips.

Bake, uncovered, at 350 F. for 40 to 50 minutes or until potatoes are tender.
